 Ingredients (serves 3–4)
• 1 tbsp olive oil
• 3 cloves garlic (minced)
• 1 tbsp fresh ginger (grated)
• 1 tsp turmeric powder
• 1 small onion (chopped)
• 2 carrots (sliced)
• 2 celery stalks (chopped)
• 1 zucchini (chopped)
• 6 cups vegetable broth
• 1 cup cooked chickpeas or lentils
• 2 cups kale or spinach
• Juice of ½ lemon
• Salt & black pepper to taste

Instructions
1. Heat olive oil in a pot over medium heat.
2. Sauté garlic, ginger, and onion until fragrant.
3. Add turmeric, carrots, celery, and zucchini; cook 3–4 minutes.
4. Pour in vegetable broth and simmer 15–20 minutes.
5. Stir in chickpeas/lentils and greens; cook 3–5 more minutes.
6. Add lemon juice, season with salt and pepper, and serve.
